As anticipated, so far this week of work has totally sucked. I’m just checked out. I want to sleep late, laze around all day, and drink wine and eat cookies. Seriously, that’s all I want for Christmas….starting now. Unfortunately, that’s going to have to wait until Friday.
One good thing is that all my holiday party engagements are now over. Sorry to my clients who I no-showed on last night. I was chained to my desk, and was not able to make it happen. I’m hoping they won’t even notice I wasn’t there. This year I topped out at 5 holiday parties. They always seem so fun in theory, but by the end, I’m just over it. One thing that sucks about having a very public blog like this, is that people expect me to bring some super amazing, mind blowing food to these parties. In reality, I’m usually just swamped with work and holiday stress, and shoot for the easiest possible solution. This year happened to be these mini galettes.
Step 1. Buy refrigerated pie dough
Step 2. cut into circles using cookie cutter
Step 3. fill with anything you have (mine are raspberry goat cheese and sun-dried tomato, feta, spinach and bacon)
Step 4. fold up the sides, Brush with egg wash, and bake according to package directions
Step 5. tell everyone its all made from scratch and you just miraculously “whipped it up” while looking fabulous
No workout for me yesterday. Only so much torture I can take in one day. Take pity on me will ya, and tell me about all the fabulous holiday foods you’re planning, so I can be inspired for my cooking bonanza that is taking place as soon as all this pesky work is complete.
