I eat alone fairly frequently. The Hubs works a ton, plays inner tube water polo on Wednesday’s, and is otherwise constantly traveling and entertaining clients. I don’t mind as our relationship began while he was in the Navy, so I’m used to him being gone a lot. The only thing is, its hard to cook for one.
Generally my go to is salad. The Hubs hates having salad for dinner, but I love it, so I usually eat that when he’s not around. This week, I found myself alone without salad stuff in the fridge so I got creative. I did have a roll of refrigerated pizza dough, and some miscellaneous vegetables which triggered, what I consider to be, a stroke of genius.
For lunch that day, I unrolled about 1/3 of the pizza dough, sliced it off then cooked it according to the package instructions. Then, I sliced and roasted some eggplant (Coat with salt and cooking spray and roast for 30 minutes at 400 degrees, turning once). I cut the cooked dough in 1/2 to make “bread slices”, then layered my sandwich with Sun-dried tomato hummus (Majestic Sprouted Hummus is my newest obsession) feta cheese, tomatoes, onions, the roasted eggplant, and arugula.
Later that evening for dinner, I cooked up the remaining pizza dough which I topped with tomatoes, basil and mozzarella, and had myself a little personal margarita pizza. Two meals for one, all in one can of pizza dough!
