Football is officially back. I don’t mind football, but I don’t totally love it either. I like watching RedZone that only shows the action and none of the boring stuff. The Hubs, of course, is a crazy football fanatic, and told me that “his depression had lifted now that football was on again” Ha. Ha. I do like to have a reason to make some appetizers or fun foods, and football gives me that, so I guess I’ll cut it some slack. In honor of the inaugural Monday night football game of the season, I made a very manly snack for The Hubs. You know how he loves his spicy foods, so these were a total hit. Very easy to make, and you can make 2 or 25 depending on the size of your party.
Bacon Wrapped Jalapeno Poppers recipe from The Pioneer Woman
**I added shredded mexican cheese blend to the mix too
**Amounts vary depending on how many poppers you want to make
Cut the jalapeno in half. Clean out seeds and membranes. Smear softened cream cheese inside each jalapeno half (I mixed the cream cheese and mexican cheese blend together then smeared it inside the jalapenos) Wrap each jalapeno half with bacon and secure with toothpicks. Place them on a pan with a rack (so bacon grease can escape) and bake at 375 degrees for 20-25 minutes or until bacon is cooked completely.
