I need to add beach bonfire to my 52 weekends list. We’re about halfway through the year and my list is going pretty good. What I’ve found is that I’ve been spending a lot more time trying new things during the week, and then using my weekends to relax, catch up on work, or just be lazy. The point was to spend less time on the couch, expand my horizons, and keep my life moving in a forward direction, so who cares if those activities just so happen to fall on a weekday. It all counts.
I think a lot of people fall into complacency in their lives after a while. I’ve realized that I’m surrounded every single day by opportunities to enrich my life, and I’m doing my very best to seize those. Open your eyes people! Look around. Try something new. You might hate it, but at least you’ll have something new to talk about at dinner.
Due to some unforeseen financial inconveniences, I am being forced to postpone some of the major travel I was hoping to embark on this year, but I’m fully prepared to fill those slots with more local adventures like having a beach bonfire. Sometimes it really is the simplest things that make the best memories.
Some friends of ours in north county do the beach bonfire thing regularly, so I’m hoping to piggyback on their fiesta at some point this summer. I’ll definitely bring these graham cracker cookies s’mores…….because regular graham crackers aren’t as fun.
I had never heard of anyone making graham cracker cookies before which usually means it can’t be done. With a little googling, I found THIS RECIPE which worked pretty well. Some of the cookies were perfect, some had big clumps of grahams in them, and some spread way too much. They all tasted great.
I’ll continue to work on this recipe throughout the summer, hopefully creating the perfect concoction, but I wanted to share now in case you were looking to start a new summer tradition, embark on a local adventure, or just eat something slightly more delicious than usual. If it’s the latter, be sure to use Reese’s Peanut Butter Chocolate Bar in place of classic plain Hershey’s chocolate like I did.
