After a weekend of nonstop eating and drinking in San Francisco and a follow up of chicken and waffle grilled cheese sandwiches, my body is begging me for something healthy.
I’m not sure if it’s because I’m getting older or if it’s because I eat so little processed food anymore, but when I overindulge, I pay for it for days.
Beyond the usual “digestive” problems, after even one day of bad eating I find myself with low energy, lack of mental focus, and occasional lightheadedness. I also find that I don’t sleep very well when I’ve had too much junk.
I guess it’s both a good and bad thing. Such obvious and regular negative effects definitely make me think twice about that slice of cake, but it does remind me that my body is a pretty well oiled machine. I’m proud of how well I take care of myself these days.
Healthy eating can take a lot of time, but it doesn’t have to. These days I’m majorly pressed for time, so I’m super grateful for Melissa’s Produce prepared and packaged foods, namely the garbanzo beans and the artichoke hearts.
Greek Garbanzo Bean Salad
In less than 10 minutes threw together this Greek garbanzo bean salad. I chopped some red onion, cucumber, tomatoes and spinach, opened some ready-to-eat add on’s (garbanzo beans, artichoke hearts, feta cheese), and drizzled it all with a little balsamic dressing (store bought). Super simple.
A few more salads like this one and my body should start to play nice once again.
I don’t think anything could get me to permanently give up beer, tacos, chips, ice cream, Sees candies, nachos, peanut MnM’s, cheese plates, risotto, wine, soft pretzels, dumplings, empanadas or bacon, but it’s good to know that with a few healthy choices post binge, I can steer my body and mind back on track in no time.
