Hello Monday. We meet again. I guess I can’t be too upset about the work week starting again because I did have a pretty fun weekend despite the rain. However it wasn’t the most productive couple of days I’ve ever had. Its time to buckle down and rev up to hyper productive mode again! I’ve got so much to accomplish before I leave for vacation in 2 weeks!
I know a lot of people around the internet do “meatless Mondays.” I definitely think its important to be aware of what you’re putting in your body, and how it affects the environment. I personally eat meatless frequently, although its more about taste preferences than it is about making some grand statement. However, my whole thing is, if you want to do something, and you believe in it, why wait until Monday? Just do it now, or always. That being said, I found this funny page called “Hunk of Meat Mondays” I’ve got plenty of meat hunk recipes, so I thought we’d switch it up a little this week and a participate in this one.
The Hubs got a smoker for Christmas, and has been a meat smoking fool ever since. His latest endeavor was this beef jerky which I didn’t think I would like as much as I did. The difference between homemade beef jerky and store bought beef jerky is night and day! This was spicy, smoky, and chewy in the best possible way. I hope he makes more soon!!
5lbs of beef tip steak cut into strips
your favorite steak and chop seasoning
crushed red pepper
Heat smoker to 175 degrees. Generously season the meat with the steak and chop seasoning (we used Brazos Legends Steak and Chop Seasoning) and crushed red pepper. Spread the strips on the smoker racks in a thin layer. Smoke for 6 to 8 hours
