Eggs are a MUST have in our house. Both the Hubs and I eat eggs daily so we are never without lots of eggs. Today I’m trying to clean out my fridge in preparation for a big grocery shopping trip tomorrow. Often times I’ll take a bunch of leftover vegetables and almost gone cheeses,mix em up with some eggs and make a quiche. I’m sure there are probably some technical things that actually constitute a “real” quiche but I just call anything that’s pie shaped and made with eggs a quiche. Quiches are so easy to make, are good for a couple days and can be eaten for any meal. Today’s quiche consists of a box of frozen spinach, approximately 1/3 of a bag of pre-shredded italian cheese blend, approximately 5 tablespoons of feta cheese, one remaining fresh buffalo mozzarella ball, 4 green onions and 1/2 a pint of grape tomatoes. I mixed em all up with 4 eggs and 4 egg whites and baked it for about 35 minutes at 350.
We’ll have this for a late snack tonight and probably breakfast and/or lunch tomorrow since we’re going to the movies tonight and having popcorn for dinner!! (My fave!)
