I had such a great weekend that Monday isn’t even seeming so bad today. I am finally starting to feel caught up on my insane workload, so I was really able to enjoy the time with my friends this weekend without work creeping into my thoughts.
On Saturday the weather was PERFECT! Literally. 78 and sunny! Some friends came over and the boys watched college football on the poolside TV while the girls caught some rays and caught up on our celeb gossip. Yes, alcoholic drinks were consumed 😉
Sunday I got up early and The Hubs joined me for a run “up the hill.” Once again, completely perfect weather, and the view coming down the other side was spectacular! After we got home I fired up the crock pot so the men-folk would have some lunch ready by halftime of the Chargers game. (yes, autumn revolves around football around here). I made some chipotle slow cooker tacos which is a fave of The Hubs since they are very spicy!
I originally got this recipe from good Ol’ Betty Crocker. I use ground turkey in my tacos instead of the chicken, although I do see that they sell ground chicken at Vons now which I had never noticed in the past. Like any caring wife, I try to feed my family the healthiest food possible. Especially when our houseguest makes a supplementary dish referred to as the “man casserole” (or even worse the “fart casserole”) consisting of velveeta shells and cheese, a pound of bacon, and ground beef topped with more cheese and bread crumbs. Delicious, NOT nutritious.
|3||lb lean (at least 80%) ground beef (OR TURKEY!)|
|1||large onion, chopped (1 cup)|
|1||Anaheim chile, chopped (1/3 cup)|
|3/4||cup chili sauce|
|1/2||cup mole sauce (from 9-oz container)|
|3||tablespoons chopped chipotle chiles in adobo sauce (I use a little more since the Hubs likes it spicy)|
|1||teaspoon ground cumin|
|flour tortillas (heck, use crunchy if you like)|
|2||cups shredded Cheddar cheese (8 oz)|
|3||medium tomatoes, chopped (1 1/2 cups)|
Once the tacos were on, I left the boys to their sports and hopped on my bike to meet up with some girlfriends for a little drinking and shopping. I’m getting SUPER excited about my upcoming mexican vacation and wanted to get some new duds for the trip. Here’s a sweet scenic pic from my bike ride
We met up at a bar and drank some bloody mary’s (of course) Then hit up some shops. First stop, JACKPOT!!! All swim suits 40% off!!!!!!!! I am a bathing suit junkie! I already ordered 2 new ones online (that have not yet arrived) and I got 2 more at this store. I am going to wear a different suit each day of vacation! Its like a dream come true. I got a bunch of other cute stuff too. We made 2 supplemental drink stops and managed to find and devour a soft pretzel. I rode home in my new hat and wrapped up the evening by baking some pumpkin brownies (post to come!) and catching up on Desperate Housewives. Back to the grind today but a fun and relaxing weekend like that makes it so much easier to handle 🙂
