Yes, I’m still “eating light”. To be honest, for the most part, I’m just eating fistfuls of lunchmeat throughout the day during my scarce five minute breaks. Its only February 9th and I’m already wiped out from tax season! Only 3 more heavy duty weeks left! I think I can, I think I can……..
This recipe is super simple and that is EXACTLY what I need this time of year. I looked back at my notes on this, but I cannot determine where I originally got this recipe. I’ve been making it for years so, sorry for whoever I got it from that I am not crediting. If you ever have a super busy day at work and need to whip up a meal in 10 minutes, give this one a try!
Rosemary Shrimp and White Bean Salad
2 T Olive Oil
2 clove garlic
1/2 tsp. rosemary
1/4 c. chicken broth
1 can white beans, drained and rinsed
2 tsp lemon juice
1 scallion, chopped
(okay, after reading this list of ingredients I bet this recipe came from Cooking for Two magazine. (aka. cooking for elderly) Seems like small portions. Anyway, feel free to multiply this recipe to make enough for whoever you are feeding)
In a skillet heat oil over medium heat. Add garlic and rosemary. Cook until fragrant. Add shrimp and stir fry until pink. Add broth, cover, lower heat and simmer until cooked through (about 4 minutes)
Remove shrimp with a slotted spoon. Toss shrimp with beans and lemon juice then cool in the fridge. Once cooled, toss with scallion. Serve over greens.
I know its only Wednesday but I am REALLY looking forward to this weekend! My plans so far are
1. Go for a bike ride
2. Read the stack of magazines I have not had a chance to look at lately
3. Possibly make some cheese biscuits
