There is one thing I DO NOT eat and that is mayo (ok, and bananas). If its mixed into a dip or VERY well camouflaged I will have some, but for the most part, it’s dead to me. I absolutely hate the stuff. The Hubs hates it too which works out great for me. This being said, I have never had a lobster roll before. I love lobster, and I love the idea of this sandwich, but I just could not get past the mayo. However, I have learned a new trick. You can substitute greek yogurt for mayo in pretty much any recipe! Yogurt is another thing I don’t really like (I hate that tangy after taste), but I find it much more tolerable than mayo. This trick has also opened up such options as tuna salad and chicken salad to me, which I have never eaten in the past.
When I saw this recipe in the latest issue of Cooking Light, I decided to give my greek yogurt substitution a shot. Here’s another great tip, the best time to buy specialty items, like lobster, is the day after a holiday such as father’s day. I got these lobster tails for $5.00 each! Two days later, I saw them for $13.99 each! Score! This recipe was a giant success in this house. The Hubs LOVED it, and couldn’t believe we were actually eating lobster at home!
Lobster rolls recipe from Cooking Light
- 1/3 cup chopped celery
- 1/2 teaspoon grated lemon rind
- 2 tablespoons chopped green onions *I substituted chives
- 1 tablespoon finely chopped fresh tarragon
- 3 tablespoons canola mayonnaise *I substituted greek yogurt
- 1 1/2 tablespoons fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground red pepper
- 3/4 pound lobster meat, steamed and chopped
- 4 (1 1/2-ounce) New England-style hot dog buns, toasted
Combine first 11 ingredients in a large bowl, stirring well; cover and chill at least 1 hour. Divide lobster mixture evenly among buns.
I served mine with a big ‘ol baked potato! It was a perfect summer meal.
