I’ve worked on a ton of photoshoots lately, which has translated to me eating a lot of random food.
As a food stylist, there are many occasions where the food I’m working with winds up being inedible for a variety of reasons. Either it sits out for too long under hot lights, it’s undercooked to begin with, or it’s just been handled or manipulated to an unsanitary level.
My least favorite part of my job is having to throw away so much food.
Luckily, the shoots I’ve done lately have involved very little manipulation which means The Hubs and I are able to eat the leftovers once the photos are complete. This is both a blessing and a curse.
After several weeks of consuming strange combinations of multiple types of tacos, pizza, pastries and popcorn, my stomach is saying STOP! It’s time for me to get back to a well balanced, healthy diet.
That being said, I still don’t have much time to meal plan and shop so of course I turned to Sun Basket to help me out.
This month I chose steak and eggs with cauliflower rice which was a great low-carb, high protein meal that was perfect for fueling busy weeks. Plus, The Hubs is always happy when I served steak for dinner.
Next we tried the kale, ricotta, and carrot gratin with parsley-arugula salad. The best part of this menu option was that you can assemble it ahead of time and bake it when you’re ready which is great because I’m often exhausted at the end of the day, and while Sun Basket meals are always simple to prepare, it’s always better to be able to just pop something in the oven at the end of the day.
Our final meals (that’s right TWO for one) were the breakfasts that were available this week. Probably my most favorite thing about Sun Basket is that they offer breakfast options both of which only took MINUTES to prepare. Easy, healthy meals are the best way to start a day.
This week was Mediterranean baked eggs with pistou, and kale-pineapple smoothies.
