I would like to share with you all a bit of my behind the scenes dining.
Every night for the majority of my life I have eaten dinner off “My Plate” Now some people have “their chair” or “their spot on the couch” but this plate is literally mine. I made it. Every second grader who had Mrs. Jelenik (sorry if I spelled that wrong) at Whittier elementary school in Downers Grove, IL got to make one of these plates. All of my brothers also had her as a teacher and got to make a plate as well. At dinner time, my younger brother, Matt, would set the table (that was his chore) and we each would eat off our own plates every single night. I guess that was my Mom’s way of stopping us from fighting over who got what place setting. (Smart teachers for thinking up projects like this!) Now mind you, I have no idea how these plates were made. I only remember coloring a picture on a plate-sized circle of paper and a week or so later, VOILA! it magically became a plate. (A super durable one at that, its been in regular use for over 20 years) On my last trip back to DG my Mom gave me my plate. The tradition has continued here on the west coast and I still eat off this same plate every single night. I won’t keep you in suspense any longer. BEHOLD, the art genius of my 7 year old brain!!!!
Wow!!! Mr. sun is too cool in his shades!! I am so TAN! HA! Love it!
Anyway, for those of you who are in this blog for the recipes and not the sweet kiddie art, here’s a pic of dinner tonight. Mahi Mahi with Bacon-Tomato butter (on the Betsy Plate of course!)
And lastly, in closing on a summery note, I finally whipped up the watermelon mojitos I’ve been dreaming about. Pureed watermelon+rum+soda water+mint & sugar muddled together+lime juice. Make your own proportions (trust me, you’ll know if you got it wrong) This drink is summertime in a glass! Cheers to Friday tomorrow and a great weekend ahead!
