With the Super Bowl right around the corner, I highly recommend making some irish nachos for your football loving crowd. Irish nachos are just like regular nachos, but you replace the chips with crispy potatoes.
Oh yes. They are as good as they sound.
When I was running on leftovers just before leaving on vacation, I whipped up this plate of goodness for The Hubs. Potatoes are so versatile, and I usually have one or two on hand in case of a hunger emergency. On this particular day, my emergency potatoes got smothered in leftover pulled pork and cheddar cheese, and turned into an awesome plate of irish nachos.
They were devoured with no complaints. How’s that for an on-the-fly dinner?
Pulled Pork Irish Nachos
Pulled pork nacho toppings on potatoes
- 3 red potatoes sliced
- Olive oil
- 2 cups leftover pulled pork
- 1 cup shredded cheddar cheese
- Heat oven to 350 degrees. Coat potato slices with olive oil and bake flat on a baking sheet for 12 minutes. Turn, and bake an additional 10 minutes until crispy.
- Pile crispy potato slices onto an ovenproof dish. Top with shredded pulled pork and cheddar cheese. Bake for 3-6 minutes until cheese is bubbly.
