We have one of our favoritest house guests with us for the next 2 weeks, Jack the Dog. His mom, Teresa, texted me that his 4th birthday is today. We made sure to have an extra special fun weekend to celebrate. It included a trip to the beach, and these homemade treats. Teresa also left me with some pumpkin puree that she made from pumpkins that she grew in her garden. Just the thing for some special b-day treats!
Pumpkin Drop Treats recipe from “You Bake Em. Dog Biscuits” by Janine Adams
1 1/2 C. whole wheat flour **I used AP since that’s all I had
1/2 t. ground cinnamon
1/2 t. ground nutmeg
3 T. applesauce
2 egg whites **Totally forgot to add the egg whites
1/2 c. solid pack pumpkin **I used fresh pumpkin puree
1/2 c. water
Preheat oven to 400 degrees. Combine all ingredients in a large bowl and mix together to a cookie-dough-like consistency. Drop by the teaspoonful onto a greased baking sheet 1 inch apart. Bake for 12 to 15 minutes. Cookies should be firm when done. Turn off oven and let cookies cool in the oven to harden somewhat. 1-2 hours or overnight.
