I think I’ve finally recovered from labor day weekend. I woke today with a clear mind, lots of energy, and motivation to get some work done! With my parents in town the week before, and the short week this week, let’s just say things have been slipping through the cracks around here. That’s about to change. Does anyone else’s productivity go in waves like this? I need to figure out how to keep it more steady. Maybe its just my scorpio personality that makes me SURGE and then slack off.
All this soon-to-be productivity requires fuel. Brain food. This salad is exactly that. Its packed with protein, fiber, and healthy fats. Plus, its great on a still-hot day like today. I’m hoping this will power me through a trip to Orange County today, an Insanity workout, and an evening of desk work. Seems possible right?
Bean Salad with Herb Dressing
1lb fresh green beans
1 t. Gourmet Garden basil
1 t. Gourmet Garden parsley
1 t. Gourmet Garden dill
1/2 t. Gourmet Garden garlic
2 T. balsamic vinegar
salt and pepper
1 medium red pepper, diced
1/2 c. red onion, diced
1 medium tomato, diced
1 can of cannellini beans, rinsed and drained
1 can artichoke hearts, drained
freshly shaved parmesan cheese
Steam green beans over boiling water in a covered pan for 2 minutes. Rinse under cold water. Drain well.
Meanwhile, whisk together basil, parsley, dill, garlic, and balsamic. Seasonal mixture with salt and pepper to taste.
Combine the green beans with, red pepper, red onion, tomato, cannellini beans and artichoke hearts. Drizzle with herb and balsamic mixture. Toss well to coat. Top with parmesan and serve.
