Salted Peanut Butter Cup Cookies

An award winning recipe for salted peanut butter cup cookies. Gooey, and chocolately with a smooth peanut butter flavor. The perfect cookie for any occasion.

The holidays are upon us and I’ve got cookies on the brain. This year my annual cookiepocalypse has been greatly scaled back since I don’t have nearly as many people to share with since moving to Oakland, but that’s not stopping me from experimenting with some new recipes.

The winning recipe from all my experiments are these salted peanut butter cup cookies. They sound way more complicated than they actually are.

Salted Peanut Butter Cup Cookies

Inspiration struck while I was shopping the bulk bin section at my most favoritest grocery store recently, Sprouts Farmers Market.

I’m super fortunate to have been able to partner with Sprouts this year. It was my favorite store in San Diego, and I was stoked to see they recently opened a store here in Oakland.

The bulk bin section is my favorite part about Sprouts. Pretty much ANYTHING is available in the bulk bins which is great for those who are cooking up a little or a lot. You can buy only as much as you need.

When I say ANYTHING, I mean anything including miniature peanut butter cups, rolled oats, and sea salt.

I think you see where I’m going with this.

I took a classic chocolate chip oatmeal cookie and substituted these super cute mini peanut butter cups, and sprinkled each cookie with a little flake sea salt. Talk about a winning combination………possibly.

Sprouts organized a little bulk bin cookie recipe exchange/competition between me and a few other bloggers. I’ll find out soon enough if my recipe was a winning recipe, but in the meantime, I received some great cookies made from Sprouts bulk bin ingredients from two other bloggers. A delicious chocolate orange cookie, and a white chocolate fruit and nut pretzel bark. Both will be hard to beat so keep your fingers crossed for me!

Salted Peanut Butter Cup Oatmeal Cookies

Ingredients

  • 3/4 cup butter room temperature
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 tablespoons milk
  • 2 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 1/2 cups rolled oats
  • 2 cups miniature peanut butter cups
  • flake salt

Instructions

  1. preheat oven to 350 degrees
  2. In the bowl of a mixer cream together butter and sugars until mixture is light and fluffy.
  3. Mix in the eggs one at a time, followed by the milk and vanilla extract.
  4. In a separate bowl, whisk together flour baking soda, baking powder, and salt.
  5. Turn mixer to low and gradually add flour mixture. Fold in the oats and peanut butter cups by hand.
  6. Drop one inch balls of dough onto a baking sheet covered in parchment paper. Sprinkle a couple of flakes of salt on each ball and bake for 12-14 minutes until golden brown on the edges.
  7. Cool on a baking sheet for several minutes before transferring to a wire rack to cool completely.
