First off, I’d like to wish a very happy birthday to my nephew, Christian, who turns 13 today! I’m trying to remember what being 13 is like, but I must admit, its a challenge. One day a week I work at a client whose office is next to a middle school. When I see all those kids walking to school I think they look WAY too young to be in middle school. I guess its just me getting old. Anyway, happy birthday Christian! May the teenage years treat you well!
I’m realizing that September is already winding down, and I haven’t done too much in the way of Seasonal Potluck recipes. I really want to take advantage of these last days, since I love apples and tomatoes so much. One recipe I had been holding on to for a long time was a spicy apple butter recipe. Much to my dismay, it didn’t turn out quite right. I know where my mistake was, and I will definitely re-try the recipe with a few tweaks. The apple butter I did make was still tasty (the issue was it was a bit too runny) and I didn’t really want to throw it out (after all, I cooked it for 24 hours). I saw this cupcake idea on pinterest, and decided to strain my apple butter and give it a shot. Now, I haven’t had a whole lotta luck making fruit filled cupcakes in the past, so I was very apprehensive.
I’m happy to report that they turned out pretty darn good! Bonus: I used up another box of cake mix I had in my pantry! Here’s the quick how-to. Make your favorite vanilla cake mix according to package directions. Fill cupcake papers 1/2 full. Add a scoop of apple butter. Top off with remaining batter so the apple butter is covered, then bake according to package instructions. I frosted mine with a remaining can of vanilla frosting I had in my pantry (we can’t always be gourmet all the time) and sprinkled them with cinnamon. Tastes like fall!
