Kelley and I have been doing this Seasonal Potluck thing since April now, and it hasn’t always been easy agreeing on the monthly ingredient. She’s in Chicago, and I’m in San Diego, so we’re not always getting the same stuff at the same time. This month, however, I really hit the jackpot. Peaches are EVERYWHERE in San Diego! Only 88 cents a pound at Henry’s this week, so I stocked up, and have a bajillion peach recipes to bring your way! (Our other August ingredient, corn, is also in abundance in San Diego right now. 3 ears for $1!)
Since it’s Friday, that means HAPPY HOUR! I’m gonna need a few drinks to ease my sorrows over the fact that the BlogHer conference is in town this weekend and I am not attending. Boo. I will be heading out to the Queen Bee Market tomorrow if anyone who is reading would like to meet up! Besides that, I really have no plans this weekend. Is anyone doing anything exciting?
Peach Collins recipe from Sunset Magazine
1/4 c each simple syrup and fresh lemon juice
1/2 c. chopped, ripe peaches, divided
1/2 c. flavored peach flavored vodka (I used plain vodka)
1/2 c. club soda
2 peach slices
Mix simple syrup, lemon juice, 1/4 c peaches, and about 1/2 c. ice in a shaker. Using the end of a wooden spoon, muddle the mixture until the peaches start to break up. Pour in vodka. Cover and shake until blended. Divide unstrained mixture between tall glasses. Add half the remaining chopped peaches to each, then fill the glasses with ice. Top each with 1/4 c. club soda and garnish with a peach slice.
