Welcome to June, also known as Strawberry month here at Seasonal Potluck! Since it’s Friday, we’ve got to do a little cocktail action! Don’t get me wrong, I love asparagus, but the lack of cocktails in May was a real bummer.
I recently read and article titled, “The top 5 regrets people have on their deathbed” It sounds kind of morbid, but it was really an insight on what people wish they were doing more of on a day to day basis. Although all of the things mentioned in the article are things I try to actively work on in order to NOT regret them later in life (really, the whole purpose behind betsylife), one regret I know I will never have is #4 “I wish I had stayed in better touch with my friends”. I think I’m a pretty darn good stayer-in-toucher. Sometimes I wish my friends would reach out to me more often, but I always want to hear from them, regardless, and I truly make an honest effort to constantly touch base with all my friends, near or far. Whether it be a postcard in the mail, a text, or just a quick post on their Facebook wall, I really try to let people know if and when I am thinking about them. Sure, I wish I could see them/talk to them/hang out with them even more than I do, but I know in my heart that our relationships are strong, and I work to maintain that strength.
Anyway, back to the champagne. My friend Jenny (who now goes by Jen, but I’ll never be able to call her that since we’ve been friends for so long) and I have long had a standing bi-annual date. I go to see her, wherever she may be in the world, for her birthday every year (January 31st) and she comes to see me for the 4th of July every year. I’m pretty sure we haven’t missed a year since college. We met the very first day of high school. We sat next to each other in first period study hall, in the front row. We were both on the cheerleading team, and became instant friends. Even though we went to colleges in different states, we always made an effort to see each other at least once a year. After graduation, our bi-annual date began. When she lived in Chicago, we would meet in Miami for her b-day. Now that she lives in Seattle, Miami has been dubbed “too far”, so I just go to see her in Seattle. I look forward to it every year. All we do is walk around, go shopping, eat tons of delish food, and drink insane amounts of French 75’s, a highly delicious champagne cocktail (bless her super patient boyfriend, Frank). Since Jenny will be here the last weekend of June this year, instead of July 4th (due to previous commitments) I’m positive we’ll be imbibing on these bad boys instead!
Lady Germain recipe from Yumsugar
3/4 oz. gin (** we use vodka, always vodka)
1/2 oz. fresh lemon juice
1 strawberry, muddled
1/2 oz. St. Germain elderflower liqueur
3 oz. Champagne
Tools: shaker, strainer
- Shake first four ingredients and strain into flute.
- Top with Champagne and serve.
Makes 1 drink.
I’ll let you in on a little secret, no one else is here right now, I only made 2 drinks for photo purposes, so I’m going to have to drink them both myself! (Friday!) Cheers to you Jenny!!! Clink! I can’t wait to see your pretty face in just a couple weeks!
