The past few days I’ve been fighting off a nasty cold. Today it officially started to turn around so I’m feeling optimistic that I’ll be good as new before my friends arrive from out of town this weekend. Just like most people, when I’m sick I want to eat soup to warm my insides and make me feel better. Unlike most people these days, I’m sitting pretty, in beautiful 70 degree weather, while the rest of the country is buried in snow! So for all those who are freezing in the cold, and for anyone who is fighting off an illness as well, this recipe is for you!
I had half a bag of shrimp leftover from the Lemongrass and Garlic Shrimp I made yesterday, so I made a variation of my Spicy crab and corn chowder. Its important to remember that many ingredients in recipes are easily substitutable, so don’t get discouraged if you don’t like a recipe ingredient or if you don’t have it on hand. I frequently google “XYZ Substitute” to mold recipes to fit my tastes/lifestyle
