A while ago, the lovely people at Wholly Guacamole sent me a big ol’ box of their products to try. Ha! Little did they know I already buy and use their products, but hey, I’m not one to say no to a free cooler full of salsa and guacamole. What I didn’t know about Wholly is that their guacamole’s are freezable which was amazing because there is no way I could possibly have eaten all the guac they sent me before it went bad. I also didn’t realize the variety of products they carry within their brand line. My favorite new discovery was their 100 calorie individual guacamole packs. They are perfect for lunches because you can throw them in your bag frozen, and they’ll be ready to eat by lunch. Plus, they keep everything else cold.
With new products comes new inspiration. Although The Hubs would dip chips till his heart’s content, I wanted to figure out some new ways to eat up this guacamole. My first brainstorm was this southwestern meatloaf, which turned out so well, I think it may be my new favorite food. Its super healthy, seasonal, and packed with flavor AND nutrition! Can’t beat that!
2 ears fresh corn
1 1/4 lbs extra lean ground turkey
1 can black beans, rinsed and drained
1/2 c. diced red onion
2 cloves minced garlic
1/2 tsp chili powder
1/4 tsp cumin
pinch of salt and pepper
1/4 c. cilantro, chopped
5 T. Wholly Salsa (or your favorite salsa)
3/4 c. quick oats
1 c. Wholly Guacamole or your favorite guacamole
Preheat oven to 375 degrees. Heat a grill pan to high heat. Spray corn and jalapeno with cooking spray and grill until charred. Place jalapeno in a plastic bag and seal. Let rest for 10 minutes. Remove jalapeno from bag, remove skin and seeds, and dice. Cut kernels from corn.
In a large bowl combine all ingredients including jalapeno and corn. Mix well. Place mixture in a loaf pan coated in cooking spray and cook for 45-60 minutes until center temperature reaches 165 degrees. Top loaf with guacamole or serve on the side.
I’m not one for leftovers usually, but this was excellent reheated! I think it would even be awesome if you chopped it up and made nachos out of it. That may defeat the nutritional purposes, but we all have to live a little, right? Huge thanks to Wholly for the great products, and inspiration!
