Back to the grind for me today again. No matter how much I try to tie up loose ends before vacation, I always wind up coming back to a flood of work. At least my blog is cooperating in that it’s taken the guesswork out of “what to post?” with another installment of Secret Recipe Club. This month I was assigned to The Tasty Cheapskate which sounded right up my alley. Um, who doesn’t love to save money and still eat deliciously?
I confess I made these sandwiches before I left for Costa Rica (although coming home to an empty fridge, I wish I had some leftovers right about now) and I was feeling a bit scattered at the time. I scoured Tasty Cheapskate for something that would be fast and easy, and could be made with stuff I already had on hand. These sandwiches fit the bill, and were delicious, satisfying and healthy to boot! I absolutely loved the slaw, and ate what didn’t fit on the sandwiches with a fork.
