Pickled Green Strawberries

Something you never thought to pickle; green strawberries! An awesome addition to any cheese plate.

Ingredients

  • 2 pints green strawberries hulls removed
  • 1 cup water
  • 1 cup apple cider vinegar
  • 2 T salt
  • 2 T sugar
  • 2 tsp black peppercorns
  • Peel of one lemon
  • 4 sprigs of rosemary

Instructions

  1. In a medium saucepan combine water, apple cider vinegar, salt and sugar. Bring to a boil.
  2. Boil until salt and sugar dissolve the remove from heat and cool completely.
  3. Fill the bottom of 2 pint jars with lemon peel and peppercorns. Pack each jar with green strawberries and thyme sprigs.
  4. Pour brine over the strawberries, seal and refrigerate for 2 days.
  5. Enjoy within 2 weeks.
