Ingredients

  • 2-15 oz cans hominy drained
  • 3-10 oz cans green enchilada sauce
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1-2 1/2 lb boneless pork loin trimmed
  • 1 cup cilantro chopped
  • 2 T. lime juice

Instructions

  1. Mix all ingredients except cilantro and lime juice in a 4-quart slow cooker.
  2. Cover and cook on low for 7-9 hours or until pork is tender.
  3. Remove and shred pork.
  4. Stir in lime juice and cilantro. Add pork and heat through.
  5. Serve with tortillas and salsa.
