Ingredients

  • 1 c whole wheat flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 c wheat germ
  • 1/2 c coconut oil
  • 1/4 c brown sugar
  • 1/4 c granulated sugar
  • 1-4.2 oz pouch of Go Go Squeez I used apple, peach, passionfruit flavor
  • 1 tsp vanilla extract
  • 1/4 tsp coconut extract
  • 1 c cooked quinoa
  • 1 c old fashioned oats
  • 1 c dried cranberries

Instructions

  1. Preheat the oven to 375 degrees
  2. In a medium bowl combine flour, salt, baking powder, baking soda and wheat germ. Set aside.
  3. In the bowl of a stand mixer, beat together coconut oil, brown sugar, granulated sugar, and Go Go Squeez until well combined. Stir in the vanilla and coconut extracts.
  4. Turn the mixer to low and gradually add in the flour mixture until fully incorporated. Mix in the quinoa, oats and cranberries.
  5. Drop teaspoon sized balls onto a baking sheet lined with parchment paper. Bake for 12-15 minutes until golden brown (bites will NOT spread)
  6. Store in an airtight container.
