  • 1 cup prepared quinoa
  • 1 tsp sesame oil
  • 1 tsp minced garlic
  • ½ teaspoon Gourmet Garden fresh ginger
  • 1 red bell pepper diced
  • ½ cup frozen edamame
  • 2 medium carrots diced
  • 1 cup spinach
  • 2 tablespoons soy sauce
  • 2 eggs lightly beaten
  • 1 bunch green onions chopped


  1. In a large skillet heat the oil over medium high heat. Add garlic and ginger and cook, stirring frequently, until fragrant, about one minute.
  2. Add pepper, edamame, and carrots.Cook until softened, about 5 minutes.
  3. Add spinach. Cover and continue cooking until spinach begins to wilt. Stir in quinoa and soy sauce and mix well to combine.
  4. Add in the eggs and cook, stirring occasionally, until the eggs are cooked through, about 5 minutes
  5. Top with chopped green onions and serve
