Ingredients

  • 2 bunches radishes trimmed and cut in half lengthwise
  • 2 Tablespoons extra virgin olive oil
  • salt and pepper to taste
  • zest from 2 lemons
  • fresh herbs for garnish

Instructions

  1. Preheat oven to 375 degrees
  2. Toss radishes in olive oil, salt and pepper.
  3. Spread onto a baking sheet in an even layer. Roast for 20-25 minutes until edges begin to brown.
  4. Top with lemon zest and chopped fresh herbs (I used parsley, basil and chives) and serve.
