Blueberry Basil Bundt Cake

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3/4 cup butter softened
  • 1 2/3 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 cup plain greek yogurt
  • 2 tablespoons fresh basil finely chopped
  • 2 cups fresh blueberries rinsed
  • For the Glaze
  • 1 cup powdered sugar sifted
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350 degrees.
  2. Thoroughly grease and flour your bundt pan. Set aside.
  3. In a medium bowl, whisk together flour, baking soda and salt. Set aside.
  4. In a large bowl, cream together butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at at time, mixing well between each addition. Add vanilla.
  5. Turn mixer to low and add the flour mixture. Beat until well combined. Add greek yogurt and basil and mix until fully incorporated. Fold in blueberries.
  6. Pour batter into the prepared bundt pan and bake for 60-65 minutes until a toothpick inserted comes out clean.
  7. Allow to cool in the pan for 10 minutes.
  8. Meanwhile, whisk together powdered sugar and lemon juice until smooth. Turn warm cake out of the pan and top with glaze immediately.
  9. Slice and enjoy!
