  • 1 lb ground beef
  • 1 jalapeno finely diced
  • 1 egg
  • salt and pepper
  • 4 oz Kerrygold aged cheddar sliced


  1. Preheat the grill to medium high heat.
  2. In a large bowl combine ground beef, jalapeño, and egg. Do not over mix
  3. Form thin patty "bottoms". Top with several slices of Kerrygold aged cheddar. Top with a formed patty "top". Carefully crimp the edges to seal the cheese in the center. Season each side with salt and pepper.
  4. Grill for 5-6 minutes per side until patties are cooked through. Allow to rest for 5 minutes before serving.
  5. Serve on a bun with your favorite toppings.
