Savory butternut squash biscuits with bacon and cheddar are the perfect way to kick off your morning. Put an egg on it and your brunch game goes from basic to epic. An awesome twist on a classic buttermilk biscuit.

Ingredients

  • 2 1/2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 4 slices bacon cooked and crumbled
  • 1 cup of shredded cheddar cheese
  • 2 tablespoons fresh herbs basil, parsley, oregano, chives, etc. finely chopped
  • 3/4 cup roasted and pureed butternut squash
  • 1/2 cup buttermilk
  • 1 egg for egg wash

Instructions

  1. Preheat oven to 400 degrees.
  2. Combine all ingredients except egg in a large bowl. Stir until a dough forms.
  3. Roll out dough on a lightly floured surface to 1/2 inch thick. Cut biscuits using a biscuit cutter or a drinking glass.
  4. Place biscuits on a baking sheet and brush with egg wash. Bake for 12-15 minutes until golden brown.
