Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 lb brussels sprouts shaved
  • salt and pepper to taste
  • zest and juice from one whole lemon
  • seeds from one pomegranate
  • 1/2 cup toasted pumpkin seeds

Instructions

  1. Heat olive oil in a skillet over medium heat. Add garlic and cook for one minute. Add brussels sprouts and cook, stirring constantly, for 2 minutes.
  2. Remove from heat and stir in the lemon juice and zest.
  3. Toss with pomegranate seeds and toasted pumpkin seeds and serve immediately.
