  • 1 box red velvet cake mix
  • 2 large eggs
  • 6 tablespoons butter melted
  • 1 tsp. vanilla extract
  • Strawberry ice cream
  • Sprinkles for garnish


  1. Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. Stir together cake mix, eggs, butter and vanilla in large bowl until fully combined.
  3. Shape dough into 1-inch balls. Place 2-inches apart on baking sheets.
  4. Bake 8 to 9 minutes or until edges are set. Cool cookies 1 minute on pan. Cool completely on wire rack.
  5. Sandwich 1/3 cup strawberry ice cream between two cookies. Roll edges in sprinkles to garnish.
