Asian Tuna and Soba Noodle Salad

Asian Tuna and Soba Noodle Salad is THE salad to make when you're sick of eating lettuce. Cold, refreshing, travels great and make the perfect lunch on the go.

Ingredients

  • 8 ounces soba noodles
  • 3 tablespoons mirin
  • 1 clove garlic minced
  • 1 teaspoon ginger minced
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 tablespoons cilantro roughly chopped
  • 10 ounces canned tuna drained
  • 1/2 cup radishes chopped
  • 1 carrot shredded
  • 1 serrano chile thinly sliced
  • 2 teaspoons scallions chopped
  • Salt and black pepper to taste

Instructions

  1. Cook soba noodles according to package directions, and rinse with cold water.

  2. In a large bowl whisk together mirin, garlic, ginger, sesame oil and vegetable oil. Add tuna and cilantro and toss to coat. Refrigerate until ready to serve. 

  3. Divide noodles between two bowls. Divide tuna mixture between each bowl and top with radishes, carrots, chiles, scallions salt and pepper. Enjoy immediately or refrigerate for later.
