Ingredients

  • 8 asparagus spears trimmed
  • 1 tablespoon olive oil
  • salt and pepper
  • 2 eggs
  • 4 slices prosciutto
  • 2 tablespoons parmesan cheese coarsely shredded
  • zest from one lemon

Instructions

  1. Preheat oven or grill to 425°F. 

  2. Coat asparagus in olive oil. Season with salt and pepper. Roast for 12-15 minutes until just tender.

  3. Meanwhile, bring a pot of water to a simmer. Poach eggs for 2-4 minutes.

  4. While eggs are poaching, heat a small skillet over medium heat. Add prosciutto to the pan and cook 1-2 minutes per side until crispy. 

  5. To assemble, place asparagus on a plate. Top with lemon zest, poached eggs, crispy prosciutto, and parmesan cheese. Season with salt and pepper.
