Roasted Corn Cheese Dip

Cheesy roasted corn dip is a simple and delicious way to enjoy that fresh summer sweet corn. A perfect appetizer for a backyard bbq or football watch party.

Ingredients

  • 1 tablespoon olive oil
  • 3 cups fresh corn kernels
  • 2 cups sharp Cheddar cheese shredded
  • 8 ounces reduced-fat cream cheese cut into small pieces
  • 1/2 cup cornflakes
  • 1/8 teaspoon cayenne or chili powder

Instructions

  1. Preheat oven to 375°F

  2. Add 1 tablespoon olive oil to a 10-inch skillet over medium heat. Add corn; cook, stirring occasionally, until mostly golden brown, 5 to 7 minutes. (Corn kernels may “pop” as they brown.)

  3. Remove from heat; stir in Cheddar and cream cheese. Sprinkle cornflakes over the top. Transfer to the oven. Bake until golden and bubbling, 18 to 20 minutes.

  4. Sprinkle the cheese dip with cayenne and serve.
