Quinoa Pancakes

A high protein breakfast will keep you going all day long. The addition of quinoa to these pancakes make them a great choice.

Ingredients

  • 3/4 cup whole wheat flour
  • 2 tsp baking powder
  • Pinch of salt
  • 1 cup cooked quinoa cooled (about 1/4 cup uncooked)
  • 1/2 tsp cinnamon
  • 1 cup unsweetened applesauce
  • 1/2 cup egg whites
  • 1/3 cup milk of your choice
  • 2 tsp vanilla extract

Instructions

  1. In a medium bowl combine flour, baking powder, salt,quinoa and cinnamon.
  2. In a separate bowl combine applesauce, egg whites, milk, and vanilla extract.
  3. Stir together wet and dry ingredients until just combined.
  4. Heat a large frying pan over a medium-low heat, and grease with butter.
  5. Drop pancake sized portions of batter into the pan (about 1/4 cup mix for each pancake) and cook until bubbles appear on the top.
  6. Carefully flip the pancakes over and cook until golden.
  7. Repeat until all pancakes are cooked, re-greasing if needed.
