Ingredients

  • 3 red potatoes sliced
  • Olive oil
  • 2 cups leftover pulled pork
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat oven to 350 degrees. Coat potato slices with olive oil and bake flat on a baking sheet for 12 minutes. Turn, and bake an additional 10 minutes until crispy.
  2. Pile crispy potato slices onto an ovenproof dish. Top with shredded pulled pork and cheddar cheese. Bake for 3-6 minutes until cheese is bubbly.
