Ingredients

  • 2 large eggs
  • 3 tablespoons vegetable oil
  • 2 cups low-fat buttermilk
  • 1/2 cup shredded cheddar cheese
  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups yellow cornmeal
  • 1 tablespoon baking powder
  • 1/4 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 jalapeño minced

Instructions

  1. Preheat waffle iron.
  2. In a large mixing bowl, whisk together flour, cornmeal, baking powder, sugar, salt, cumin, chili powder and garlic powder.
  3. Add jalapeño, buttermilk, vegetable oil, and eggs; mix well.
  4. Stir in cheddar cheese.
  5. Pour 1/2 cup of batter into your waffle maker and cook until golden brown; repeat until all batter has been used.
