Ingredients

  • 1/2 cup organic canned pumpkin
  • 4 tablespoons molasses
  • 4 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 cups whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl mix the pumpkin, molasses, vegetable oil, and water.
  3. In a separate, medium bowl combine whole wheat flour, baking soda, and baking powder. Slowly stir dry ingredients into the wet ingredients until the dough softens.
  4. Scoop out small spoonfuls of dough {about 1 inch wide} and roll them into balls with your hands.
  5. Set the balls onto a lightly greased cookie sheet and flatten them with a fork.
  6. Bake for 20 minutes
  7. Store in the refrigerator for up to 2 months
