Ingredients

  • 1/4 cup rice wine vinegar
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon honey
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon vegetable oil
  • 2 cloves of garlic
  • 1 tablespoon Gourmet Garden ginger
  • 1/2 red onion diced
  • 2 carrots diced
  • 1/2 cup broccoli chopped
  • 1/2 cup asparagus chopped
  • 1/2 cup zucchini chopped
  • 1 ear of corn kernels removed
  • 1 package Melissa's Shirataki Fettuccine Noodles

Instructions

  1. In a small bowl whisk together rice wine vinegar, soy sauce, honey and crushed red pepper. Set aside.
  2. Heat olive oil in a skillet over medium heat. Add garlic, ginger, onion and carrot to the pan. Cook 4 minutes until fragrant.
  3. Add in remaining vegetables. Cook stirring occasionally for about 8 minutes or until vegetables begin to soften.
  4. Stir in soy sauce mixture. Bring to a boil, then reduce heat to simmer until vegetables are cooked through and the sauce reduces slightly.
  5. Add noodles and stir until well combined.
