Ingredients

  • 1 pound pasta cooked al dente
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • 1 14 ounce can diced tomatoes
  • 1/2 c. roasted chili peppers you could use roasted red peppers
  • 1 cup gin
  • 1 tablespoon sugar
  • 1/2 cup cream
  • 1/2 cup Parmesan cheese grated
  • 3 T. Gourmet Garden Basil
  • Salt and pepper
  • Shredded Mozzarella cheese for garnish

Instructions

  1. In a medium pan, heat olive oil over medium high heat. Add the onions, garlic, and red pepper flakes. Cook until the onions and garlic start to soften around 5-6 minutes.
  2. Add in your tomatoes, roasted chili peppers and sugar.
  3. Remove from heat and blend with an immersion blender until smooth.
  4. Return to medium heat and add in gin.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  6. Stir in cream, parmesan and basil.
  7. Toss with pasta and serve immediately topped with fresh grated mozzarella
