Cast Iron Skillet Apple Pie

This cast iron skillet apple pie has a delicious savory cheddar crust and thin caramel layer underneath. Truly the greatest sweet and savory combination ever!

Ingredients

For the crust

  • 2 1/2 cups unbleached all purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup vegetable shortening chilled, cut into pieces
  • 6 tablespoons unsalted butter chilled, cut into 1/2-inch pieces
  • 5 ounces cheddar cheese coarsely shredded
  • 2/3 cup ice water

For the pie

  • 4 lbs apples peeled and cut into 1/2 inch wedges
  • 3/4 cup granulated sugar
  • 1/4 cup boiled apple cider
  • 1/4 cup pie filling enhancer
  • 1/3 cup butter
  • 2/3 cup firmly packed light brown sugar
  • 1 egg lightly beaten
  • 2 tbsp. granulated sugar

Instructions

To prepare the crust

  1. Combine flour, salt, shortening, butter and cheese in a large bowl. Using a pastry blender, work mixture until it resembles coarse meal. Slowly add ice water, one tablespoon at a time until dough begins to come together. Form dough into a ball and refrigerate for at least 2 hours or up to 2 days.

To prepare the pie

  1. Preheat oven to 350 degrees
  2. Divide dough in half and roll out until each portion until you have 2 discs 1/2 inch larger than your skillet.
  3. In a large bowl combine apples, granulated sugar, boiled cider, and filling enhancer. Stir until fully combined.
  4. Melt butter in a 10-inch cast-iron skillet over medium heat; add brown sugar, and cook, stirring constantly, 1 to 2 minutes or until mixture is smooth and fully combined. Remove from heat, and place 1 piecrust in skillet over brown sugar mixture. Spoon apple mixture over piecrust, and top with remaining piecrust. Fold edges over and crimp to seal.

  5. Brush top of the piecrust with beaten egg and sprinkle with 2 tablespoons granulated sugar.
  6. Cut a few slits to allow steam to escape. Bake for 60-70 minutes until golden brown and bubbly. Cover pie with aluminum foil for the last 15 minutes of baking if crust gets too brown (I did not need to do this with my oven)**Be sure to place a sheet pan under the skillet in the oven to catch drips!!!**
  7. Cool for 30 minutes before slicing.

To make your own boiled cider, boil 2 cups pure apple cider until reduced to 2/3 cups.

Substitute 1 Tablespoon +1 teaspoon of cornstarch for 1/4 cup pie filling enhancer
