Ingredients

  • 1 tsp. curry powder
  • 1/2 tsp. ground turmeric
  • 1/4 tsp. cayenne pepper
  • 2 Tbs. soy sauce
  • 2 Tbs. canola oil
  • 2 to 3 jalapeños finely chopped
  • 2 cloves garlic finely chopped
  • Coarse salt and freshly ground black pepper
  • 3 lb. chicken wings
  • Peach Bellini Jam for Dipping

Instructions

  1. In a large bowl, combine the wings, curry powder, turmeric, cayenne, soy sauce, canola oil, jalapeños, garlic, salt, and pepper. Toss to coat. Cover and refrigerate for at least 1 hour, or overnight.
  2. Remove the marinated wings from the refrigerator and let come to room temperature.
  3. Preheat grill to high heat. Place wings on the grill over indirect heat. Grill for 25-35 minutes, turning occasionally, until wings begin to brown and meat is cooked through. Move wings over direct flame to crisp the skin. Cook about 2 minutes on each side.
  4. Serve with peach preserves for dipping
