Roasted Broccolini with Crispy Kale, Chickpeas and Burrata is the perfect meatless Monday meal. Quick and easy for those days when you're craving a light dinner.
Preheat oven to 425°F
Drizzle broccolini and kale with olive oil. Sprinkle with salt, pepper and lemon zest. Toss to fully coat.
Roast for 12-15 minutes until charred and tender.
Portion vegetables onto 2 plates. Divide chickpeas and burrata between each serving.
