Ingredients

  • 2 Tablespoons lemon juice
  • 2 Tablespoons champagne vinegar
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 1 teaspoon fresh oregano
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped fresh parsley
  • 2 avocados peeled, pitted, and cubed
  • 6 slices of toasted baguette

Instructions

  1. To make the chimichurri, combine first 9 ingredients in a food processor. Pulse until fully combined.

  2. In a medium bowl, gently stir together diced avocado and chimichurri mixture.

  3. Spoon mixture onto toasted baguette and serve.
