Ingredients

  • 8 oz thin mints 1 1/2 sleeves
  • 4 Tbs butter melted
  • 2 cups chocolate milk divided
  • 2/3 cup sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 large egg
  • 2 ounces semisweet chocolate chopped
  • 1 teaspoon vanilla extract
  • 8 ounce container whipped topping

Instructions

  1. Chop thin mint cookies in a blender or food processor to form crumbs

  2. Combine cookies with melted butter and press firmly into the bottom and sides of a 9-inch pie or springform pan. Set aside.

  3. In a medium bowl, whisk together 1/2 cup chocolate milk with next 4 ingredients (through salt)

  4. In a heavy saucepan over medium-high heat remaining chocolate milk to 180° or until tiny bubbles form around edge (do not boil). Remove from heat.

    Gradually drizzle hot milk to sugar mixture while whisking constantly.

    Once fully combined, return mixture to saucepan. Add chopped chocolate; and cook over medium heat, stirring constantly, until thick and bubbly (about 5 minutes) Reduce heat to low; cook 2 minutes, stirring constantly. Remove from heat; stir in vanilla.

  5. Pour into crust; cover surface of filling with plastic wrap. Chill 3 hours or until cold.
  6. Cover pie with whipped topping, chill for 1 hour. Serve.
