Chop thin mint cookies in a blender or food processor to form crumbs
Combine cookies with melted butter and press firmly into the bottom and sides of a 9-inch pie or springform pan. Set aside.
In a medium bowl, whisk together 1/2 cup chocolate milk with next 4 ingredients (through egg)
In a heavy saucepan over medium-high heat remaining chocolate milk to 180° or until tiny bubbles form around edge (do not boil). Remove from heat.
Gradually drizzle hot milk to sugar mixture while whisking constantly.
Once fully combined, return mixture to saucepan. Add chopped chocolate; and cook over medium heat, stirring constantly, until thick and bubbly (about 5 minutes) Reduce heat to low; cook 2 minutes, stirring constantly. Remove from heat; stir in vanilla.
Cover pie with whipped topping, chill for 1 hour. Serve.
