Ingredients

  • 20 oz package refrigerated cheese tortellini
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 small red onion diced
  • 1/2 cup crumbled feta
  • 1 chicken breast cooked and diced
  • 1/4 cup olive oil
  • 2 teaspoons lemon zest
  • 1/4 cup lemon juice
  • 1 Tablespoon honey

Instructions

  1. Cook pasta in boiling water. Drain and refrigerate until cool.

  2. Prepare dressing in a small bowl by whisking together oil, lemon zest, lemon juice, and honey. Refrigerate until chilled.

  3. Combine pasta, peppers, onion and chicken. Add dressing and feta. Toss and serve
