My pal sunshine is back in San Diego and the weather has been restored to its usual summer-like glory. Living here you do really appreciate the few rainy days we have, but if I really liked rain all that much I wouldn’t have moved to sunshine paradise!
Besides, I need to keep this tan up at least until my super 30th birthday vacation to Mexico in a week!!!!!!!
Chicken Tortellini Salad
I made a summery dish today to kick off this perfect weekend. One of our all time favorites, tortellini salad. It is so lemony and is packed with tons of my favorite flavors.
What I love most about this recipe is that I can make a big batch and it saves so well. In fact, it gets better the longer the flavors have to meld together in the fridge.
Make a bowlful in the morning and enjoy it for dinner that night. There’s plenty leftover for lunch the next day. Packs and travels well! Definitely keep this chicken tortellini salad in mind the next time you’re headed to a potluck.

Chicken Tortellini Salad
Chicken tortellini salad is a simple dish that makes a great salad, side dish or main course! Potluck friendly. Packed with flavor and easy to make ahead and transport.
Ingredients
- 20 oz package refrigerated cheese tortellini
- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 small red onion diced
- 1/2 cup crumbled feta
- 1 chicken breast cooked and diced
- 1/4 cup olive oil
- 2 teaspoons lemon zest
- 1/4 cup lemon juice
- 1 Tablespoon honey
Instructions

Cook pasta in boiling water. Drain and refrigerate until cool.

Prepare dressing in a small bowl by whisking together oil, lemon zest, lemon juice, and honey. Refrigerate until chilled.

Combine pasta, peppers, onion and chicken. Add dressing and feta. Toss and serve
