Simplicity is something that I’ve been craving lately. Life can become very complicated if you let it. This year has been quite the whirlwind to say the least, and I am definitely guilty of allowing things to become to complicated in my mind.

It seems as though now is as good a time as any to scale back and keep things simple.

Food is the easiest and most logical place for me to start, especially with the bounty of fresh summer produce that’s available right now. Forget recipes with a million ingredients, and multi-step techniques. Now is the time to sit back and let the food speak for itself. It doesn’t have to be complicated to be delicious.

I found a nice looking tuna steak at the meat counter the other day that spoke to me, and decided to pair it with a simple salsa made from pineapple (my favorite!) and the pickled green strawberries I made recently. All it took was a couple minutes in a pan, and a few chops of a knife. It was fresh, healthy and way tasty.

Creating something so satisfying with so little effort was truly inspiring. It got me thinking about other tiny changes I could make in my life that would have a big impact.

Always at the top of my keep-it-simple list is purging clutter. I’ve already started collecting a bag of old clothes and shoes to donate to Goodwill. I’m also taking inventory of my kitchen (which is overflowing) and paring down my excess “stuff”.

Beyond that I plan to focus my energies on the small things that I love. Reading. Being outdoors. Hugging my dogs.

I’m already feeling calmer and more peaceful. Hopefully I’ll be able to settle into this space and not allow my mind to complicate things in the future.

Pickled Strawberry and Pineapple Salsa
  • 1 cups diced pickled strawberries
  • 1 cup diced pineapple
  • ½ cup chopped cilantro
  • 2 T chopped green onion
  • Salt, to taste
  1. Mix all ingredients in a medium bowl. Refrigerate for one hour before serving.
