There are no rest breaks over here in Betsylife. Just as soon as the unpacking began to wind down I picked up a steady styling job and a boatload of freelance work. I’m up to my eyeballs in tasks and deadlines once again, a position I am much more familiar with than the reeling terror of the unknown that I’ve been stuck in lately.
I have to say, I’m kind of loving it.
It’s nice to have things to look forward to.
We had our first houseguest last weekend, we’re heading to Lake Tahoe this weekend, then I’m off to Texas for work, followed by a visit from my bestie from Seattle. Plus, I’ve got photoshoots nearly every day in between. See? Life is jam packed.
Someday I’ll get the rest of our photos hung, my closet organized, and the remaining boxes in the garage opened. I’m dedicated to not sweating the small stuff this year (especially after the sweaty mess of drama we just emerged from), so anytime my mind starts to wander towards that panicky voice, I remind myself to just chill out. I’ll get to it when I get to it.
Since I’m pretty much unable to stay out of the kitchen despite being short on time for personal creation, I’ve been making simple, seasonal meals, like this grilled pineapple caprese salad, and posting about them when I can.
This salad has me dreaming of long, sunny, BBQ-ful summer nights. Smoky and sweet grilled pineapple, topped with burrata cheese, fresh basil, red onions and a drizzle of olive oil. Total perfection.
If we’re talking about things we’re looking forward to, summer is always at the top of my list. I’m not sure there is anything better than a San Diego summer, but I’m stoked to see what Oakland summer has to offer.
Hopefully by then, we’ll have our house ready to host some awesome BBQ’s with our NorCal friends. (More to look forward to!) Until then, I’m savoring each day, each opportunity, and each drama free moment that is put in front of me. It’s so great to rest my mind after so many months of uncertainty.
